9 put in the sellar a jar that held 32 gallons
of leaf fat two firkins & two irons pots of
gut fat two stone pots of souce fat
and half a barrel of craknels
made 229 of hard soap 200 ditto soap soft
 
to make rennet
let the calf suck just before you kill it,
then wash the bag & curd very clean, salt it
and let it lie three days, put the curd in
the bag with a little mace, and put the bag
into a linen bag, when you use the curd boil
the water, and let stand till it is cold, then
put the curd in, and let it lay twelv
hours, then salt your curd and put it in the
bag.
