Dec 23 6 hogs killed
to make Cream Cheese by mrs Adams
to two gallons of new milk warm from the Cow,
put a pint of cream mixt well with the milk,
three or four soon-falls of rennet stured in,
cover it till it wheys, then turn it into a
cloth over the rat, till all the whey is drained
of, then put it into the vat, & put in the top, and
increase the weight on the top every hour, turn
& into a clean cloth every half hour, let it
remain in the vat till the nex morning, if
their should be any [. . .] whey in it, rat it over
with salt night & morning,
fit to eat in four or five days.
